when everyone here is busy cooking and baking for christmas...kita pun nak sibuk-sibuk bake jugak...
here's a recipe for blueberry cupcakes i made..which turned out to be quite good
but i dont think it suitable for those who can't stand extreme sweetness..

Blueberry Cupcakes

375g plain flour
3 teaspoons baking powder
1 teaspoon of salt
125g unsalted butter (room temperature)
200g sugar
2 eggs
240ml milk or cream
90gm frozen or fresh blueberries (kalau frozen, defrost dulu)
1 tablespoon water

Blueberry Icing
6 tablespoons thickened cream
375g icing sugar
45g crushed blueberries

1. Preheat oven 180°C.
2. Mix flour, baking powder and salt together and set aside.
3. In the large bowl of an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at
a time, beating well after each addition. Alternately add dry ingredients and milk or cream.
4.Using a fork, crush 135g blueberries with 1 tablespoon water until they are soft. Save 45g for the whipped
cream. Add 90 g to the batter and blend thoroughly. Batter will be blue.Gently fold in remaining 90g
5. Spoon batter into cupcake papers, filling cups about 2/3 full. Cook for 20 to 25 min or until
a tester inserted into the centre come out clean. Remove from oven and cool.
6. To make the whipped cream:
With an electric beater, beat cream until it starts to form soft peaks.Gradually add sugar , beating
constantly. Add reserved crushed blueberries and beat until stiff.
7. Top cupcakes with whipped cream and sprinkle with dried blueberries , and dust with icing sugar.
