Cucumber from my kitchen garden



Sweet Cucumber Pickles (Recipe- M Wheldon)

Ingredients: 1.5 kg fresh cucumber 1 green capsicum 2 medium onions ¼ cup salt 1¼ cups white sugar 1 tblsp mustard seed 1 tsp celery seed 1 tsp turmeric 2½ cups white vinegar.

Method: Wash and slice cucumber thinly. Remove seeds and pith from capsicum and thinly slice. Peel and thinly slice onions.
Place vegetables in large bowl and mix salt well into them. Leave overnight. Strain off into a sieve and discard juice. Rinse ll in cold water.
Place sugar, spices and vinegar in a pan and heat gently stirring with a wooden spoon until sugar has dissolved.
Bring to the boil and add sliced vegetables and boil for 1 minute.
Remove the vegetables from the pickle liquid with a slotted spoon and simmer liquid for 15 minutes.
Remove the pan from heat and stir in vegetables again for 1 minute. Spoon the pickle into sterilised jars and fill each jar with the liquid. Cover and seal.
Leave for 2 weeks before using.
