Pumpkin Kootu

 
 
 
Untuk makan tengah hari ini, auntie jumpa resepi
lama ala ala masakan dari India, lagi pun auntie masih
ada labu ayng belebihan, so cuba aje lah, ini lah
rupa nya Pumpkin Kootu yang di kata kan


Ingredients

300 g pumpkin skinned and washed and cubed
3 dried chillies -sliced
3 shallots sliced
1/2 tsp mustard seed
1/2 cup thick coconut
1/2 cup thin coconut
1 tsp sugar
1 tsp ghee
salt to taste

Method

1) Heat ghee in a frying pan, add mustard seeds
and shallots and fry for 2 minutes.
2) Add pumpkin,thin coconut milk and salt. Simmer.
3)When pumpkin is cooked add thick coconut
milk. Stir well and simmer a little longer on low heat.
4)Add sugar and cook till gravy thickens.
